Undeclared Allergens Supplant Pathogens For Food Recalls

The most recent quarterly research shows that more foods are recalled due to undeclared allergens such as peanuts, milk and wheat, than pathogens like bacteria or parasites, according to Food Safety News. Undeclared allergens were behind more than 60 percent of the U.S. Food and Drug Administration recalls in the second quarter of 2013, compared to only 34 percent earlier this year. Allergens mostly included the “Big 8” – wheat, crustacean shellfish, eggs, fish, peanuts, milk, tree nuts and soybeans. Full article
