Nation’s Restaurant News (NRN) compiled a list of the top-five culinary trends of 2015, which includes gluten-free cuisine, food-waste reduction/management, hyperlocal sourcing, natural ingredients/minimally processed food and environmental sustainability. The NRN’s Bret Thorn said in his article, “Americans are discussing food more than any time in recent memory. Consumers are devising their own diets, asking questions about where their food comes from, and showing a growing interest in how their dining choices affect the environment.”
