Consumers are becoming more interested in the story behind their food, according to Nation's Restaurant News, reporting on this year’s Multi-Unit Foodservice Operators Conference (MUFSO) that took place from Sept. 20 to 22 in Dallas, TX. Emerging food trends at the expo included local eating, clean labels and trendy flavors such as culinary mashups.

One additional trend that might appeal to OCS operators is the increased interest in premium items. The source reports that research shows consumers are looking for positive qualities in their food—something to make it distinguishable.
