Minerals dissolved in water both damage coffee brewers, but also improve the taste of the beverage, according to Communicaffe. In a recent article it discusses how descaling coffee equipment occasionally is necessary, but that leaving some minerals in the water to carry body and aroma to the palate is preferred. The article suggests following the new Specialty Coffee Association technical standards for water brewing which include how many parts per million, grains or milligrams of certain minerals are best.
