Vending and micro market operators can watch these 2027 flavor trends

Datassential’s 2027 trends report highlights emerging flavors and familiar foods getting a new look. Couth they provide possible signals for vending and micro market assortments?

Datassential’s 2027 food and beverage trends report calls out flavors and products that it expects to influence consumers’ food and beverage preferences. While it does not identify vending-specific products or forecast demand in convenience services, broader F&B trends could ultimately be reflected in vending, micro market and other convenience services assortment sales.

Among the items Datassential calls “New Classics” are chili crisp, hibiscus and dirty soda. The report also points to banana, mango and deli salads as established food items being presented in new ways. Examples include banana coffee and mango sticky rice ice cream.

Datassential also lists buldak, a Korean spicy chicken preparation, and falooda, a South Asian dessert, among foods and flavors to watch. Its beverage list includes Vietnamese lemonade, koji milk and the cantarito, a Mexican cocktail traditionally made with citrus and grapefruit soda. Some of these are dishes or beverages rather than flavor cues for packaged products.

The report names Mexico City, or CDMX, as a cuisine to watch. Datassential says 58% of U.S. consumers are interested in trying CDMX cuisine, including 75% of Millennials.

Datassential’s findings draw on more than 20 years of menu and consumer data, the company says.
