2016 Food Trend Will Include Vegetables As An Entrée

After a decade of government, consumer and food and environmental activism, eating more vegetables and being mindful of food waste are now going mainstream, according to MPR News. Based on more restaurants embracing vegetables as the main dish and meats as a side dish as well as the trend in Millennial eating, the source calls 2016 the year vegetables take center of the plate.

Also, a project labeled WastED has been launched to use more of the vegetables, putting less in landfills and composts. The movement is called the stem-to-leaf approach following the meat example nose-to-tail eating. Food waste has been identified as an issue by the U.S. Department of Agriculture and the Environmental Protection Agency who in a joint statement set a goal to reduce food waste by 50 percent by 2030.
