An AI platform could be used to determine coffee quality

A Colombian-Israeli company has developed artificial intelligence program that determines the quality of coffee beans when used with handheld sensors.

According to reports, Demetria has completed trials with one of the world's largest coffee traders.

Demetria said its technology uses portable near infra-red (NIR) sensors to analyze and fingerprint green coffee beans for biochemical markers. Then its AI-based data intelligence platform accurately matches each bean profile according to the industry standard coffee flavor wheel.

The process will first need a human to input the quality parameters, but after that it will be able to grade coffee before it's roasted.

The company is launching a suite of SaaS-based solutions used to ascertain bean quality alongside cupping. This will deliver taste assessment and profiling, along with accurate quality measurement and traceability throughout the supply chain, Demetria said.
