According to Technomic, a foodservice industry data source, foodservice includes restaurants and bars, convenience stores and other retail wet coffee sales for immediate consumption, travel and leisure, business and industry, education, healthcare, vending, office coffee (OCS), military foodservice and corrections.

Retail outlets include supermarkets/grocery stores, supercenters, mass merchandisers, warehouse clubs, gourmet/specialty food stores, drugstores and direct sales channels, packaged coffee in convenience stores and coffee shops like Starbucks and Dunkin Donuts.

This report is largely concerned about the foodservice or away from home portion of the U.S. coffee industry. While it discusses a roaster's overall business where they compete in both markets, it focused on the Foodservice portion of the market.
