Specialty Cheese Company is a family-owned cheese manufacturer, based in Reeseville, WI (pop ~700). Mom and Dad run the fresh cheese operation, and the Son and his Wife run Just The Cheese® business. Product was originally invented from the idea that the best part of a grilled cheese sandwich is what melts off in the pan.
