GILLIES COFFEES ON TAP varieties are lovingly brewed in 5-gallon batches with specially filtered Brooklyn tap water at controlled refrigerated temperatures for a minimum of 18 hours. The brew is then clarified through unbleached muslin, and pressed in Gillies’ own innovation -- a stainless steel coffee-press, then kegged in a disposable-liner keg. The 20-liter kegs are put-up fresh daily and labeled with “Born-On” and 30-Day Best-Before Dating. When refrigerated from brew to serve these tasty brews can remain fresh for up to 45 days.
