Starbucks To Introduce Cold-Brew Coffee

March 13, 2015

Starbucks announced that it will be offering cold-brew coffee in 2,800 locations beginning March 31. The move comes following successful cold brew tests in Boston, MA, and San Francisco, CA, in 2014.

Cold brew refers to how the coffee is produced, as reported by VendingMarketWatch. Ground coffee is soaked in room-temperature water, or chilled water, for an average of 12 hours, then filtered out. The remaining coffee is concentrated, less acidic and sweeter tasting (less bitter). Iced espresso beverages – such as an Iced Latte or Iced Caffè Americano – are made by combining espresso shots with cold milk or water and ice.

“We began by asking what we wanted from Cold Brew,” said Michelle Sundquist, a 17-year partner (employee) on Starbucks Research and Development team, said in a prepared statement. “Then we looked at qualities of the coffee created through the cold brewing process, and began to narrow in on the specific flavors we wanted – and that involved looking at different roast levels, coffees and cold brewing styles.”

Cold brew has been making a trickled entrance into the coffee service industry. Chicago-based Classic Group are distributors of third wave coffee roaster Stumptown’s cold brew. Automatic Merchandiser reported in its August issue that 11.6 percent of OCS operators offer customers cold brew coffee.
