Trend: Consumer Demand For Certain Seafood Rises

The research firm Datassential reported that, although consumption of seafood in the U.S. has fallen overall, more consumers are increasing demands for certain types of seafood, according to Nation’s Restaurant News. The report found that in the last year, seafood offerings on menus has increase in ceviche, tilapia, octopus and grilled salmon, to name a few. Ceviche offerings increased 11 percent in 2013 while tilapia grew 7.7 percent. Full article.
